Peppermint Crunch Slice

Carly from Thrive Wholesome Treats has worked with our Peppermint Essential Oil to create a yummy vegan treat!
When ingested, Peppermint oil helps aid with digestion, nausea, fresh breath and oral health, and an increase in energy. Aromatically, it assists in sinus and respiratory relief, energy and stamina, and improved focus and concentration. Topically, it helps to relieve muscle and joint pain, cooling body temperature, and alleviate headaches.
Recipe - Makes 8-12 slices
- ½ cup walnuts
- ½ cup cashews
- ½ cup cacao powder
- ¼ teaspoon salt
- 2 cups dried dates
- ¼ cup activated buckwheat
In a food processor, combine the walnuts, cashews, cacao powder and salt- pulse into a fine powder. Add in the dates and combine until you get a soft crumb texture then quickly pulse in the activated buckwheat to combine. Press into your mould- I used a silicone individual pieces mould, but a standard loaf tin with a liner will also work.
Peppermint Cream Layer
- ⅓ cup coconut butter, liquified
- ⅓ cup coconut cream (use the super creamy top part of the can only if you can help it)
- ¼ cup coconut oil, liquefied
- 3 tablespoons maple syrup
- 3-5 drops Peppermint Essential Oils
- 1 A good pinch of fine sea salt
Mix everything until you get a super creamy batter and pour over your prepared brownie.
Refrigerate for 3-4 hours or until firm and pour over chocolate topping.
- Your favourite vegan chocolate bar 100g
- 1 tablespoon coconut oil
In a double boiler, melt the chocolate bar. Whisk in the coconut oil and pour over your prepared base, place to set in the freezer until set. If you made a slab, cut while it is still frozen to make it easier. Will keep in the fridge for 3-4 days and in the freezer for one month.
